As we head into the holiday season, MDI has so much to be thankful for. We would like to wish you and yours a happy Thanksgiving and share one of our favorite seasonal recipes. We hope that this sweet potato biscuit recipe that will bring as smiles to your table as it has to ours over the years. It’s easy and irresistible. Enjoy!

Mix the following together in a bowl:

2 cups plain flour

4 teaspoons baking powder

1 teaspoon salt

2/3 cup shortening

1 tablespoon granulated sugar

1 cup mashed sweet potato (you can use canned sweet potato!)

1-3 teaspoons of milk (add slowly to make sure the batter is just the right consistency)

Form mixture into biscuits and place on cookie sheet. Bake at 400 degrees for 20 minutes. Should make 15-24 biscuits.
